What Is Cold Foam?
Cold foam is cold milk whipped fast enough to trap air, with no steam and no heat. Because it is aerated cold, it stays thick and pourable on top of an iced drink instead of melting straight in the way warm foam does.
What it is made of
- In its plainest form: milk and air. Nothing else is required.
- Sweetened versions add syrup, sugar or a splash of cream before frothing.
- The structure comes from milk proteins wrapping around air bubbles. That is why low-fat milk, which has proportionally more protein than fat, makes the stiffest cold foam.
Cold foam vs whipped cream
- Whipped cream is made from cream with a high fat content and holds a stiff shape you can spoon.
- Cold foam is made mostly from milk and stays fluid enough to pour and to blend gradually into the drink.
- Whipped cream sits on top and melts into a sweet layer; cold foam slowly folds into the coffee and changes the whole drink's texture.
Cold foam vs steamed milk foam
- Steamed foam is heated and used on hot drinks such as lattes and cappuccinos; the bubbles are held by warm protein.
- Cold foam never passes through heat, which keeps it dense and lets it float on ice.
- Pouring hot foam over ice ruins both: the foam collapses and the ice dilutes the drink.
What you need to make it
- A handheld frother is the fastest route — 20-30 seconds per drink.
- A sealed jar, a French press or an immersion blender will all work, more slowly and with a coarser bubble.
- You do not need an espresso machine or a steam wand; heat is the one thing cold foam does not use.
