How to Keep Soda From Going Flat (2-Liter, Can and Bottle)
Soda goes flat because dissolved carbon dioxide escapes into the empty space above the liquid every time you open the bottle. To keep soda fizzy: keep it cold, keep the headspace small, and re-pressurise the bottle with a soda stopper after every pour. Cold soda holds roughly twice as much CO2 as room-temperature soda, and a pressurised cap can keep an opened 2-liter drinkable for around two weeks instead of two to four days.
Why soda goes flat
- Carbonated drinks are bottled under about 2-4 atmospheres of pressure. That pressure is what keeps CO2 dissolved in the liquid.
- The moment you crack the cap, the pressure drops to atmospheric and CO2 starts leaving the liquid to fill the empty space at the top of the bottle.
- Every re-opening vents that CO2-rich air and restarts the process, which is why the third day of a 2-liter is far worse than the first.
- Warmth accelerates it: CO2 is roughly twice as soluble at fridge temperature (4°C / 39°F) as it is at room temperature.
What actually works, ranked
- Pressurised soda stopper — best. It pumps air back into the headspace so CO2 stops escaping. Expect around 10-14 days of usable fizz on a 2-liter instead of 2-4.
- Refrigerate immediately — big win, free. Never leave an opened bottle on the counter between pours.
- Squeeze the bottle before capping — helpful. Less headspace means less room for CO2 to escape into. Works on plastic only, not glass.
- Decant into a smaller sealed bottle — helpful, especially when a 2-liter is half empty.

How long an opened soda lasts

- Opened can, no lid: a few hours. Cans have no reseal, so decant leftovers into a sealable bottle.
- Opened can with a snap-on can lid: about a day — a can lid stops spills, but it does not hold pressure.
- Unopened soda is safe well past the printed date; that date is a fizz date, not a safety date.
How to use a pressurised soda stopper
- Pour what you need first — pressurise the bottle only once it is closed for storage.
- Screw the stopper on in place of the original cap until it is finger-tight.
- Pump or press until you feel firm resistance; that resistance is the pressure building in the headspace.
- Return the bottle to the fridge upright.
- Release the valve before unscrewing — never fight a pressurised cap.
- Re-pressurise after every single pour. Skipping one pour undoes most of the benefit.
Sparkling water, beer and wine are different
- Sparkling water behaves exactly like soda: a pressurised stopper works well.
- Beer suffers from oxygen as much as from lost fizz, so an opened bottle is best finished the same day.
- Sparkling wine needs a dedicated champagne stopper that clamps to the lip of the bottle.
- Still wine is the opposite problem — there you want to remove air with a vacuum stopper, not add it.
