Watch out for
  • Volume is not weight

    A tablespoon of flour weighs about 8 g and a tablespoon of honey about 21 g, even though both fill the same spoon. Always convert per ingredient, which is what the gram table below does.

  • Level, not heaped

    Every figure assumes a level spoon. A heaped teaspoon of baking powder can hold nearly twice the intended amount, which is enough to change how a bake rises.

  • Australia is the exception

    An Australian metric tablespoon is 20 ml, so it holds 4 teaspoons rather than 3. US, UK and Canadian tablespoons are all 15 ml.
